Peach Caprese Salad

Peach caprese salad is a creative spin on the classic caprese salad. You can choose to add peaches to a traditional recipe, or substitute peaches instead of tomatoes for a sweet flavor that kids will enjoy. A benefit of this salad is that it’s simple to prepare, making it perfect for a quick snack. Just slice fresh mozzarella cheese, a ripe yellow peach, and a ripe tomato. Layer them in an alternating pattern on a dish with fresh basil leaves. Drizzle with extra virgin olive oil and balsamic vinegar.

Peanut Butter Cookie Smoothie

This peanut butter cookie smoothie makes a healthy treat that’s great for breakfast or an after-school (or after-work) snack. The oats provide fiber, and the banana adds a healthy serving of essential vitamins and minerals. Use low-fat milk or almond milk to increase the health benefits by decreasing the calories.
